Cascade Park Communities knows our residents love good cooking! We strive to provide tasty choices each and every day. CPC utilizes a “seasonal menu cycle” consisting of four 28-day menus. These menus are rotated every three months in accordance with the changing seasons. Each menu is reviewed and approved by a registered dietitian on a quarterly basis. Our consulting dietitian ensures that the menu plan meets the standards set forth by the Department of Health for a 24-hour residential care facility.

Sample Breakfast Menus:

    • Eggs Benedict, Hashbrown Potatoes, Fresh Casaba Melon
    • French Toast, Bacon, Fresh Strawberries
    • Scrambled Eggs, Biscuit & Gravy, Sausage Patty

The standard diet consists of approximately 1800 calories per day, with 50 – 60% of calories coming from carbohydrates, 15 – 20% of calories from protein, and 30% or fewer calories from fat. Carbohydrates are spread evenly though out the day to help residents with diabetes to control their blood sugar level. Residents may request smaller or larger portions.

Sample Lunch Menus:

    • Country Fried Steak, Stuffed Potato, Green Beans w/ Bacon, Waldorf Salad
    • Sole Almondine, Roasted Red Potatoes, Sautéed Zucchini and Tomatoes, Cottage Cheese and Peaches
    • Chichen and Mushroom Fettuccine Alfredo, Capri Vegetables, Garlic Breadstick, Carrot Cake

For individuals concerned with their sodium intake, our chefs follow a “low salt” approach to preparing meals. Salt and pepper are available on each table in our spacious dining rooms.

Sample Supper Menus:

    • Shrimp Louie Salad, Spring Roll, Strawberry Shortcake
    • Broccoli Cheddar Soup, Philly Beefsteak Sandwich, Fresh Fruit Parfait
    • Chicken & Dumplings, Fresh Spinach Salad, Lemon Pudding Cake

Each resident’s dietary needs are individually assessed prior to admission.  Should an individual require a more specialized diet, we would consult with their primary physician and/or a registered dietitian to ensure that we have the ability to fully meet their nutritional needs.
